Curry dishes are some of my most favorite food, very strong flavors that pleasantly fill the palate with delicious, intense taste. Sometimes really spicy, depending on how much and what type of chili they add during the preparation of the paste!

One of the best cuisine for trying the exquisite specialty for sure is the Thai one, some of the best I’ve tried. Depending on the color of the paste with which the dish is made, the Thai curry is divided into red curry, yellow curry and green curry.

The Thai curry paste is made from different ingredients, mashed and mixed together by the expert hands of some cook in a traditional stone mortar in which they usually throw shrimp paste (with the strong smell that not everyone likes, used a lot in the south-est Asian and in South China dishes) and the garlic, onion, lemon grass and chili pepper, which can be very spicy! You can also find in the preparation some coriander, black pepper, turmeric and many other ingredients according to the various recipes that often vary from region to region.

The Thai green curry paste is obtained from fresh and green peppers, which make it the spicier of the 3. The red paste uses more mature red peppers, which are less spicy than the green ones. Finally, the yellow paste, which is the least spicy, has turmeric as the ingredient responsible for the characteristic taste and color.

The curry paste is added to the other ingredients at the moment of cooking this delicious Thai food.

The main dishes are usually based on fish, meat and vegetables.

Often found in the recipe is the Thai aubergines (small, round and rather crunchy), long beans, peas aubergine (slightly larger than the peas we are used to eat but much more crispy), potatoes, peanuts, cashews…

During the cooking process, the delicious coconut milk (sometimes coconut cream) and some herbs are added.

The dishes can be noodles immersed in spicy broth with all the ingredients or be a thicker sauce to eat with rice.

Some of the Thai curry recipes that I prefer and which I recommend you try are the Khao soi (typical dish of Northern Thailand), the Massaman curry and among all the Phanaeng curry, or even transcribed as Panang curry.

Remember that the flavors are quite strong and spicy, so they are dishes for the hot tastes lovers!
